All the holidays are finishing up and at the same time all the New Year’s resolutions are beginning. Perhaps you (like us) have resolved to get back on a healthier path after straying so far during the holiday season. Or maybe you’re simply craving something a little lighter after so many delicious, yet heavy meals. If that’s the case, you might enjoy this salad that combines some fruits and greens.
This is a refreshing, yet filling salad that is actually my husband’s creation! Enjoy!
Ingredients
- Organic Spring Mix
- 1 8oz. Carton of Strawberries
- 3 Mandarin Oranges
- Sliced Almonds (to taste)
- Pecans (to taste)
- Raspberry Olive Oil Vinaigrette (we use Kraft)
- Small container of Low-fat Cottage Cheese
- Feta Cheese
Directions
Slice strawberries. Peel and section mandarins. Put 2 handfuls of spring mix on each plate, leaving space for cottage cheese in the middle. Serve a helping of cottage cheese in center. Layer with rest of ingredients. Top with sliced almonds and raspberry vinaigrette.
Optional: Serve with sliced boiled egg.
NOTE: If you prefer to go VEGAN, simply leave off the cheeses and replace the protein from the boiled egg with a side of cooked quinoa.
