Chia Bolillio Breakfast

In order for my day to start well, breakfast is a must. 

Years ago, what mattered to me most were the amount of calories in a certain food.  I’ve renewed my thinking about food and now seek to nourish my husband’s and my body instead of simply trying to avoid weight gain.  Now when I look at a label, I look to see the amount of vitamins and sugar and try to have a balanced lifestyle.

Chia seeds have recently become popular and Jonathan and I sprinkle them on various breakfast foods. Chia seeds are a good source of Omega-3 fatty acids which have been shown to help those with elevated cholesterol.  These little seeds are also packed full of many other nutrients and are said to have higher antioxidant activity than blueberries. Chia Bolillio breakfast was born out of a gift of Trader Joe’s Organic Raspberry Fruit Spread.  We’d never eaten raspberry jam before so I decided to try it with bananas and chia seeds.  The slight tang of the raspberry flavor couple perfectly with the sweetness of the bananas.

Ingredients

  • 1 Gluten-free Bolillio
  • Raspberry Fruit Spread
  • 1 Banana
  • 2 Tbsp Chia Seeds
  • Sliced Almonds

Directions

Slice bolillio in half.  Put in toaster.  After toasted, spread raspberry jam on each half.  Top with sliced banana, chia seeds and almonds.  Enjoy!
